AGED PECORINO

Made from whole sheep's milk and aged for a minimum of three months, its flavour is intense without reaching the complexity and texture of a more aged Pecorino. Its exceptional balance makes it extremely versatile. It's great on its own or as the focal point of your cheese board. When it is used as flakes, it becomes the secret ingredient for a salad packed with flavour, or you can grate it to add an extra something to your pasta dishes.
