Maybe the most sought after size? 20cm 7 7/8" (aka 8") hand forged and hand ground carbon steel Cuisine Massive / Nogent style chef knife with what looks like rosewood handle in good used condition. Blade had some rust leaving shallow pits but has not been sharpened in much and the handle is nice and secure free from cracks.
No markings but this would have been made in either Thiers or Nogent.
Nogent style knives are characterized by their one piece wood handles, with a rat tail stick tang extending to the end of the handle and a round steel or aluminum ferrule. ‘Cuisine Massive’ was used to describe the style in Thiers, as Nogent was a rival knife making city.
