The distillery produces sweet potato shochu using traditional methods, such as preparing the koji in "murobuta" (Japanese cedar box), then preparing the primary and secondary potato mash in jars. Shiraishi is committed to the quality of its raw materials and uses local rice and sweet potatoes grown without pesticides in its own fields.
