Created from liquid drawn from 9 hogshead and 6 butts with almost 3 years further ageing in 1st fill Amontillado sherry casks. Complete Old Perth Amontillado Accessory [QbVgM37p] has been bottled at 52.8% vol, non-chill filtered and without any additional colouring. 

Amontillado gets it unique flavour from two stages of aging, first protected by a layer of yeast, then exposed to air to develop more complex, nutty notes. Unlike the deeply sweet and fruity character of Pedro Ximénez or Oloroso sherries, Amontillado offers a drier, more savoury character.
