Variety: Chardonnay
Gregoire Bonnet began this estate in 1862. After six generations in this family, the longevity of this wine is going nowhere. The fruit has always been sourced from their own family vineyards strewn across five Premier Cru and Grand Cru villages in the region of Champagne with home base in the village of Chamery. Gregoire was one of the first recoltant manipulants of the village, indicating that he grew his own fruit and bottled it as well. While the family name may have history attached to it, they continue to improve as they now implement organic practices. The name of their domaine has also evolved as Bonnet was the original name, though a woman of the name Ponson, with wine in her blood, married into the Bonnet family.
While this wine is quality, it is by no means classic, nor ordinary. As the region of Champagne pivots its style in the wake of climate change, we see many other varieties being used, as well as a plethora of still wines. This Chardonnay comes with vines averaging 60 years old. The wine is aged for seven months in old barrels before aging in bottle for several years before release.
