“La Penitencia” is sourced from a steep, northeast-facing parcel of 80–100-year-old vines in the Valtuille de Abajo zone of Bierzo, planted on a complex mix of slate, clay, and sand. Though it’s dominated by Mencía, the vineyard is co-planted with a field blend of indigenous varieties like Alicante Bouschet, Bastardo (Trousseau), and Garnacha Tintorera, all harvested and vinified together. The fruit is hand-picked, then fermented whole-cluster with native yeasts in open wooden vats. Aging occurs in used French oak for 12–14 months, with minimal sulfur additions.
On the nose, the wine exudes purity—raspberry, hibiscus, crushed rock, and subtle smoke. The palate is remarkably focused and fresh, with a mineral tension that reflects the vineyard’s cool exposure and old vines. This is a cerebral red, ideally paired with roasted quail, wild mushroom dishes, or aged Manchego.
