ABOUT THIS WINE

​The "Aedín" vineyard spans 1.5 acres and is planted with an heirloom clone of Cabernet Sauvignon believed to have originated from Château Margaux in the 1800s. The vines are cultivated using sustainable practices, emphasizing biodiversity and minimal intervention. The 2021 vintage benefited from favorable growing conditions, resulting in grapes with optimal ripeness and balanced acidity. In the cellar, the wine undergoes natural fermentation with indigenous yeasts and is aged in neutral oak barrels to preserve the purity of fruit and terroir expression. On the palate, expect layers of blackcurrant, plum, and hints of tobacco, supported by well-integrated tannins and a vibrant acidity. This wine pairs well with grilled meats, hearty stews, and aged cheeses.​
